4 lemons
4 eggs
100g of butter
100g of sugar
Grate the lemon zest and squeeze the juice from the lemons.
In a saucepan, mix the juice, zest, eggs, sugar and butter.
Place over low heat and stir until you have a thick cream sauce.
Blend the biscuits Petit Henry’s and pour a spoonful of melted butter over them.
Place a layer of biscuits, a layer of lemon curd and repeat the operation.
Set aside to cool.
The brand Henry’s dates back to 1929. Its creator, Mr. Henri handcrafted the product in a small workshop located in a popular district of Casablanca. The biscuit was then sold in a tin box called “demi-tine” (half-tin), a unit of measure that corresponds to 1.5 kg.
